Hi, I'm Matthew James Duffy!

I am a dedicated teacher who loves inspiring people to learn the art of sourdough baking. I have spent over a decade in constant pursuit of knowledge to refine my skills, improve my technique and master my craft.

I graduated from the University of Guelph with a bachelor's degree in Hotel and Food Administration, and a culinary diploma from the Stratford Chef school. I am a Red Seal certified Chef and over the past 15 years, I've worked in some of the world's finest restaurants and hotels, as a chef with a passion for baking bread. After years of apprenticing with some of the best bakers in the field, I became a Baking Professor and the Baking and Pastry Arts Management Program Coordinator at a leading Canadian college. All while running a successful micro-bakery.

Q. When does the course start and finish?

  • The course starts the moment you enroll and it is always available! It is a self-paced online course - you can work and learn at your own pace.

Q. Will this make me a better baker?

  • If you show up and do the work, I am confident this course will make you a better baker!

Q. How long until I see improvements in my panettone?

  • Panettone is VERY challenging but by following the course and practicing you will be able to successfully make panettone at home.

Q. How long do I have to access the course?

  • How does a lifetime sound? After enrolling you will have unlimited access to the course and any BONUS materials that are added later on.

Q. What equipment/tools will I need to complete the course?

  • You will need a mixer. This course showcases a spiral mixer but it is also explained how to make the recipe in a planetary mixer.
  • You will need some skewers to hang your panettone but you can use wooden ones found at any grocery store. I will provide some resources on where to get them.
  • You will need STRONG flour.
  • You will need panettone baking molds, information on where to get them is provided in the course.
